Palačinke od mladog luka / Scallion Pancakes

Gledajući nove postove kolega blogera koje pratimo na WordPressu, naišli smo na jedan jako zanimljiv recept. Ljubaznošću blogerke Let’s Nom Nom upoznali smo se i sa ovim receptom. Pročitali, lajkovali, komentarisali i kao „hajde da pravimo jedan dan“. No, već sutradan su se stvari tako namestile da su ove ukusne palačinke morale biti isprobane.

Evo kako je to izgledalo u našoj režiji:

  • 1kg ovsenog brašna
  • 400g integralnog ražanog brašna
  • oko 100g mlevenog lanenog semena
  • 2 veze mladog luka
  • kašičica sode bikarbone
  • 4 kašičice morske soli
  • kari, biber, kardamon
  • voda
  • devičansko maslinovo ulje (za prženje)

 

oklagijaU posudu za mešenje sipati brašno, seckani mladi luka, sodu bikarbonu, začine. Sa malo vode u posebnoj činiji pomešati mleveni lan, pa dodati ostalim sastojcima. Mešati i mešati dok gustina testa ne bude takva da može da se mesi i oblikuje rukama. Prebaciti na radnu površinu i praviti loptice veličine pesnice. Razvlačiti oklagijom (da, onaj zaboravljeni predmet koji služi za mešenje, a ne da se preti mužu njome; mada i tu je efektivna) tako da se dobije što pravilniji krug koji staje u tiganj u kome ćete peći palačinke. Debljina razvučenog testa treba da bude oko polovine prsta.

Razvučene palačinke pažljivo (po potrebi uz pomoć špatule) spuštati u tiganj sa zagrejanim uljem. Najbolje u vezi ovog recepta je što ne mora da bude duboko ulje, niti se potroši mnogo, čak i kada se pravi giga-mega mera (kao u našem slučaju 🙂 ). Peći 1-2 minuta sa jedne strane, zatim okrenuti i peći još toliko sa druge.

palacinkeGotove palačinke sekli smo na „trouglove“. Ovo što vidite na slici je samo jedan tanjir. A bilo ih je 2. Znamo, alavci smo. U našu odbranu, pravljeno je za 4 osobe i ostalo je i repete.

Servirali smo uz slučajno nastali preliv od blendanog barenog brokolija i sojinog jogurta. Mirođija se lepo složila sa ostalim ukusima, iako je bila posuta više zbog dekoracije. A paprika? Najslađa koju smo do sada jeli!

Prezadovoljni smo ovim receptom! Za smesu mogu da se koriste različita brašna i različito povrće da se stavlja unutra. Dva dana nakon inicijalnog pravljenja, opet smo ih spremali, u nešto drugačijoj verziji. Ali, više o tome drugi put 😉

Reading new posts from our fellow bloggers we follow on WordPress, we came across a very interesting recipe. We also found this recipe, courtesy of blogger Let’s Nom Nom. As we read it we hit the „like“, posted a comment and made a remark to ourselves “let’s make it one day.” But the next day stars have aligned in that way for these delicious scallion pancakes had to be made.

Here’s how it went in our modification:

  • 1 kilos of oat flour
  • 400 grams of dark rye flour
  • about 100 grams of ground flax seed
  • 2 bundles of scallions
  • teaspoon of baking soda
  • 4 teaspoons of sea salt
  • curry, pepper, cardamom
  • water
  • virgin olive oil (for frying)

 

oklagijaPour the flours, chopped scallions, baking soda, spices in to a mixing bowl. With a little water in a separate bowl, mix the ground flax seed, and add the other ingredients. Stir and mix until the density of the dough is such that it can be managed and spaded with hands. Place the dough on your working area and make balls the size of a fist. Use rolling pin (yes, the one forgotten utensil that is used to shape and flatten dough, not to be used for threatening your husband; although it’s quite effective as such) to create the circle of dough that fits in the pan in which you’ll bake pancakes. Thickness of the flatten dough should be about half of the finger.

Stretched pancakes put carefully down into the pan with the heated oil (if necessary with the help of a spatula). The best thing about this recipe is that it doesn’t have to be fried in deep oil, nor you’ll need to a lot of it, even in the case of the true gigantic batch (as we made 🙂 ). Fry pancakes for 1-2 minutes on one side, then turn and fry another the same.

palacinkeReady-made pancakes are cut in the “triangles”. What you see in the picture is just one plate. But we made pancakes for two plates. We know, we’re crazy. In our defense, it was made for 4 people and there were leftovers.

We have served our scallion pancakes with unplanned dressing made of blended boiled broccoli and soy yogurt. Dill has very well agreed with the other flavors, although it was just sprinkled over as a decoration. And a bell pepper? The sweetest we have ever ate!

We are very pleased with this recipe! Different types of flours and various vegetables can be used for the mixture. Two days after the initial creation, we made them in a slightly different version. But more on that another time 😉

  1. Yum! Love the idea of using blended boiled broccoli with soy yogurt as a dressing/dip. I’ll have to try that, too!
