Walnut Lettuce Wraps

Sometimes, the simplest of things can be the most enjoyable…

After having an amazing day in the forest, all that sun and fresh air really made us hungry. We wanted something tasty, but relatively hassle-free, since we walked for hours without stopping, except for a moment, to admire nature’s miracles and take photos.

It started as a usual mix-all-in salad, but instead, I decided to make this lettuce wraps.

Salad mix

  • 1 head of lettuce
  • handful of chopped scallion green parts
  • handful of wild garlic
  • handful of arugula
  • 2-3 smaller pieces of Jerusalem artichokes
  • few leaves of lemon balm
  • 200 grams of soaked buckwheat
  • juice from half a lemon
  • 1 tablespoon of sunflower seed butter
  • 2 teaspoons of salt water sole (or salt to taste)

Walnut dollops

  • 100 grams of walnuts
  • handful of chopped parsley leaves
  • 2 teaspoons of sweet paprika powder
  • 1/3 of teaspoon of cayenne pepper
  • 1 teaspoon of powdered garlic
  • 4 teaspoons of nutritional yeast
  • 2 teaspoons of salt water sole (or salt to taste)
  • Little bit of water

Separate a few of the biggest lettuce leaves for the ‘wraps’. Chop the rest of lettuce, scallions, wild garlic, arugula and lemon balm. Grate Jerusalem artichokes, add the rest of ingredients and mix well.

For walnut dollops, soak walnuts for 6-8 hours or overnight. Rinse, drain and add them in the food processor. Add the rest of the ingredients and blend until you get uniformed consistency, only a bit sticky.

Lay your lettuce leaves on a plate and fill them up with salad mix and add on top a walnut dollop.

The walnut dollops are similar to the savory walnut balls I made earlier. I find that, at least for our old food processor, the best and tastiest nut mixtures come from walnuts and cashews. With other nuts and seeds I find they end up too crumbly and not so compact. Maybe I need to blend them more or add some oil, which I’m not too keen on. What is certain, I need a better food processor 🙂

We munched on our wraps while watching one of our favorite Youtubers, Cryaotic, play Dreamfall Chapters. Great fun for a finish of a very enjoyable day. At least for two geeks like us! 😛

  1. Looks like a fun snack! I love using lettuce leaves for a wrap. Nice and crunchy! The walnut filling sounds creamy and delicious. I usually use cashews for vegan cream sauces, but maybe I should try walnut too. Any other nuts you recommend for cream sauces?

    1. I love lettuce in every way. Such a delicate flavor goes well with everything. My favorite nuts for cream sauces are definitely cashews and walnuts. Pine nuts are also fabulous, but expensive, so occasionally to spoil yourself is fine! 🙂 Pecans would probably be fine, as they are similar to walnuts. I would sooo like to try macadamia nuts, but I can’t find them in Serbia. When I buy a new food processor I’ll see if other nuts will make the cut into ‘favorite’ category 🙂

      1. I’ve tried almonds for cream sauces too. Pretty good, but not quite the same as cashews. Hah, yah… unfortunately, pine nuts are always expensive. Sigh, only for special occasions. I think you’ll love macadamia nuts! Very tasty! 😉
