Salty “Fitness” Biscuits

A couple of days ago, I picked up a book Thrive Fitness – The Vegan-Based Training Program for Maximum Strength, Health and Fitness, by Brendan Brazier. I have only read through a few pages by now, but I can already tell this is going to be very useful reading.

A little more than a month ago, I started reading about fitness and spending countless hours watching exercise videos, mainly on YouTube. So much new information to apprehend, things to learn, made me into a workout, eat, read about working out, sleep machine. And yet again, it feels like there is so much left to read, especially for us, people on a plant-based diet.
Today, we had major workout. Fitness is slowly becoming a significant part of our lives.

So this day started pretty much by sleeping in late. Ha, you thought we would say with the training, didn’t you?!

Next, after the morning salad, we proceeded with our workout session, which lasted a good part of the afternoon. Only core, and arms today with some cardio. But it was more than enough. As much as us not being able to move afterwards.
We decided that it is only appropriate to prepare something comforting and relax to some good movie, and for us that is what it’s all about.

Since we are still on a chickpea kick, and yet still amazed how flour made from it is good for baking, the decision was to make salty biscuits and two types of dip.
For the biscuit dough, we used chickpeas, grounded flax seeds, turmeric powder, black pepper, Himalayan salt and warm water, basically the same dough that we made for our chickpea pizza. For the dip we had guacamole and second one was scallions mixed with ajvar.

During the making of this, we snacked on some apples with miso, sprinkled with cinnamon. My husband is not a huge fan of the fruit, he could probably eat if I offer, but it is very unlikely that he would alone eat some. On the other hand, I am trying to practice my variation of the LCHF vegan regime, so again, not too much fruit. This was a rare occasion and was really refreshing.

Now, with a confused expression that flicked across our faces, where to put that vegan cheesecake we also made… More on that in the next post..

  1. Looks yummy as always! This week is shaping up to be a busy one for me, but as soon as I have some free time, I definitely want to try this. Chickpeas are wonderful!
